‘What to eat!’ series – #18 Eggs

 

Eggs are packed with healthy nutrients such as B vitamins, choline, iodine, vitamin A, D, E, K, calcium, zinc, selenium & phosphorus. They are an excellent source of protein & healthy fats & contain carotenes such as lutein & zeaxanthin which are powerful antioxidants.

Organic or omega-3 enriched eggs are best. The most common eggs are chicken but you can also find others such as quail, duck or goose.

What are the benefits of eggs?

Eggs are good for:

  • Eye health
  • Heart health
  • Brain health
  • Weight loss
  • Bone health
  • Muscle health & recovery

In the past, eggs got bad publicity as they are high in cholesterol: however, research now confirms that dietary cholesterol does not necessarily correlates with blood cholesterol. However, some people with certain genes, a family history of hypercholesterolemia, or an allergy to eggs should avoid them.

They are also cheap & very easy to prepare: add hard boiled eggs to a salad; have scrambled eggs with mushrooms on top of a slice of sourdough bread topped with parsley; as an omelette with chopped onions & tomatoes; poached on top of mashed avocado; or simply soft boiled.  As the perfect on-the-go healthy snack or meal, I often opt for hard boiled eggs (instead of a shop-bought sandwich) before an evening concert or conference: easy to prepare, easy to pack, easy to eat & nutrient-dense, perfect!
