Recipe – Tomato and Avocado Bruschetta

Serves 1

๐Ÿ… 150 g (1 large) Roma tomato

๐Ÿ… 100 g avocado

๐Ÿ… 100 g (2 slices) heavy bread (such as rye, spelt)

๐Ÿ… 60 g ricotta or cottage cheese

๐Ÿ… 10 g fresh herbs (such as basil, coriander, parsley, chives)

๐Ÿ… salt and black pepper, to taste

๐Ÿ… 2 teaspoons dukkah (optional)

 

๐Ÿ‘‰ Thinly slice the tomato and mash the avocado.

๐Ÿ‘‰ Toast the bread and spread with the ricotta while still hot.

๐Ÿ‘‰ Top with the mashed avocado, sliced tomato and fresh herbs, then season with salt, pepper and dukkah (if using).

๐Ÿ‘‰ Serve immediately.
