Serves 1
π 150 g (1 large) Roma tomato
π 100 g avocado
π 100 g (2 slices) heavy bread (such as rye, spelt)
π 60 g ricotta or cottage cheese
π 10 g fresh herbs (such as basil, coriander, parsley, chives)
π salt and black pepper, to taste
π 2 teaspoons dukkah (optional)
π Thinly slice the tomato and mash the avocado.
π Toast the bread and spread with the ricotta while still hot.
π Top with the mashed avocado, sliced tomato and fresh herbs, then season with salt, pepper and dukkah (if using).
π Serve immediately.
